These layered Greek Salad stacks are such a fun, fresh, and alternative way to serve a classic Greek salad and they look a little fancy without being too fussy at all.  We’re stacking juicy heirloom tomato slices, crisp cucumber, red onion, sweet bell pepper rings, briny Kalamata olives, and creamy feta, then drizzling everything with a simple homemade Greek dressing that runs down through all those beautiful layers.

Ingredients

These are the simple ingredients that make this twist on a traditional Greek salad go from forgotten side dish to talk of the table.

Tomatoes: Beautiful summer ripened beefsteak tomatoes are my absolute favorite variety to use in these stacks. They’re a bit larger and studier than some of the other varieties, however any heirloom tomato will do.

Cucumbers: I tend to like English cucumbers in Greek salad because they have a thinner skin for a slightly better texture. If traditional garden cucumbers are all you have to use, those will work too.

Bell Peppers: Use any color you have on hand. I used orange for the fun color.

Red Onion: Red onions have a bold oniony flavor perfect for this layered salad. To take away some of that boldness, you can soak the onion slices in ice water for about 30 seconds before using them.

Olives: Kalamata are best here and what is traditionally used in Greek salads. But of course, any olives will do.

Feta: You can use a block of feta you crumble yourself or pre-crumbled feta for this salad.

Olive Oil: Use a high quality extra-virgin olive oil for best flavor and health benefits.

Red Wine Vinegar: Vinegar lends acidity to the salad and dressing. You can use what you have on hand if you don’t have red wine vinegar. White wine vinegar, lemon juice, balsamic vinegar or even regular vinegar can all work.

Herbs and Spices: The herbs and spices like oregano and garlic powder are what make this salad Greek.

Variations And Substitutions

Tomatoes:  Use any heirloom variety of tomato you like.

Make It Vegan:  Make this a vegan salad by swapping the feta cheese for vegan cheese.

Kalamata Olives:  These olives can be a bit pricey, so swap them with whatever olives you have on hand.

How To Make Layered Greek Salad Stacks

Step 1. In a small bowl, whisk all your Greek salad dressing ingredients together. Set aside.

Step 3. Using 4 individual serving plates, stack the Greek salad ingredients starting with a large slice of tomato for stability, then bell peppers, a few slices of red onion, and some cucumbers.

Step 4. Continue layering the slices of ingredients on the 4 plates until all the ingredients have been used.

How To Serve This Greek Salad

These layered salad stacks are best served shortly after assembling, while the veggies are crisp and the tomatoes are juicy.

Set each stack on its own serving plate, drizzle with Greek dressing right before serving, and let everyone dig into their own beautiful little Greek salad tower.

Keep at room temperature until ready to serve. Enjoy within 30 minutes to 1 hour after preparing.

Make Ahead and Leftover Storage Tips

If you make these ahead, it is recommended to make them no more than 1 hour ahead of time.

Refrigerating these stacks can cause the tomatoes to become mealy and the olive oil to solidify and break the vinaigrette.

  • 2 large beefsteak or heirloom tomatoes

  • 1 yellow bell pepper, cut into ½ inch thick rings

Homemade Greek Dressing:

Instructions 

  • In a small bowl, whisk all your dressing ingredients together. Set aside.
  • Slice the tomatoes into rounds, about ¾-inch thick.
  • Slice and prepare remaining ingredients for your salad.
  • Set out 4 medium serving plates.
  • Place one tomato slice on each serving plate.
  • On top of each tomato slice, layer: a few slices of red onion, a layer of cucumber slices, another small layer of red onion, and bell pepper rings or strips
  • Repeat the process evenly between all four salad plates until all your vegetables are incorporated.
  • Stack neatly so the colors remain visible as shown in the pictures and video.
  • Top each stack as desired with olives and crumbled feta cheese.
  • Give your dressing another quick whisk then drizzle evenly over each of your salad stacks just before serving.
  • Allow the dressing to run down through the layers.
  • Keep at room temperature until ready to serve.
