Lightly spray air fryer basket lightly with and preheat to 380 degrees f.
Thoroughly rinse the cauliflower and cut into bite sized florets.
Set up 2 dipping station, one bowl with beaten eggs and another shallow bowl with almond flour.
Dip your florets first into the egg, allowing the excess to drip back into the bowl, then coat with the almond flour, pressing a bit to make sure they're coated.
Arrange the florets into your air fryer basket, leaving some space in between, so that they can crisp up.
Spritz your coated florets with cooking spray and cook/air fry for 12-18 minutes, flipping the florets halfway through with tongs until golden and crispy (cooking time will vary depending on the size of the florets and your air fryer). Be careful not to over crowd the basket, as it will take even longer to cook. Cook in smaller batches if you need to.
Meanwhile whisk hot sauce, tomato puree, melted butter/ghee and seasonings together in a large bowl.
Once your florets are finished cooking, place them into the bowl with your homemade buffalo sauce and gently toss until evenly coated.
Serve with carrots, celery sticks and homemade ranch dip.
