Preheat your air fryer to 400 degrees f and line a sheet pan with parchment paper.
Slice your chicken tenders in half, lengthways to make thin strips.
Season strips lightly with sea salt and pepper and stir to combine.
Beat the eggs with the oil together in a large bowl and place all of your chicken pieces into this mixture.
Fill another bowl with the remaining ingredients for the breading. Whisk to combine these ingredients well, then spread the breading onto a small, rimmed sheet pan.
Using a pair of tongs, take the chicken from your egg mixture one by one, and coat with the breading pressing down a bit to adhere; Set aside on your prepared sheet pan.
Air fry your chicken fingers in separate batches (they need space between each one to crisp up), for 6-8 minutes, or until golden and cooked through.
Serve with your favorite dips, sprinkle with fresh parsley if desired, and enjoy!
