Apple + Bacon Sandwiches

Ingredients 

  • 8 thin bacon slices, nitrate-free
  • 2 large apples, cored
  • fresh lemon wedges
  • 4 thin slices of cheddar cheese
  • chopped pecans, to garnish

Instructions 

  • Preheat your oven to 400 degrees f. and line a rimmed baking sheet with parchment paper.
  • Arrange your bacon slices without overlapping onto the prepared sheet pan.
  • Bake in the preheated oven for 12-15 min, or until nice & crispy, and done to your liking.
  • Alternatively you can cook the bacon on the stovetop.
  • Set aside on a paper towel lined plate to absorb any excess grease.
  • Cut your apples into 1/2 inch thick slices.
  • To prevent the apple from browning, rub a lemon wedge over both sides of the apple slices.
  • To assemble your apple sandwiches place one apple slice on a plate or serving board. Top with crispy bacon and cheddar, then sandwich with a second slice of apple.
  • Sprinkle with chopped pecans if desired for texture.
  • Repeat with remaining ingredients.
  • Serve and enjoy!
