Bacon Wrapped Cheese Stuffed Dates

Ingredients 

  • 3.5 oz goat cheese, or any soft cheese
  • 1/2 tsp garlic salt
  • 12 medjool dates
  • 6 thin-cut strips of nitrate-free bacon, cut in half to create 12 pieces
  • freshly chopped chives, to garnish
  • freshly ground black pepper, to taste

Instructions 

  • Preheat your oven to 375 degrees f and line a baking sheet with parchment paper.
  • In a small bowl, stir together the cheese with the garlic salt.
  • Cut a lengthwise slit in the dates and open them up, then remove and discard the pit.
  • Stuff each date with about 2 teaspoons of your cheese mixture. Pinch the dates to close.
  • Now wrap each date with a bacon strip as shown.
  • Place all the dates onto your prepared sheet as shown and bake for 15-20 minutes or until bacon is browned and crispy; Turning the dates halfway through to ensure even browning.
  • Serve your bacon wrapped dates warm or at room temperature, garnished with chopped chives and freshly ground black pepper.
