Banana Split Oatmeal Bowls

Ingredients

Oatmeal:

  • 2 cups old fashioned rolled oats
  • 2 Tbsp chia seeds
  • 2 1/4 cups unsweetened milk of choice
  • 1/4 cup pure maple syrup or raw honey
  • 2 tsps vanilla extract
  • 1/4 cup unsweetened Greek yogurt

To Assemble:

  • 4 small bananas
  • 1/3 cup Greek yogurt
  • 1 cup chopped strawberries
  • 1 cup fresh berries of choice
  • 2 Tbsps chopped walnuts
  • 2 Tbsps dark chocolate melted

Instructions

  • To make your overnight oatmeal:
  • Place all the oatmeal ingredients to a mixing bowl. Whisk well to combine, then cover and allow it to refrigerate for at least 4 hours (or overnight).
  • To assemble your banana split bowls:
  • Peel and slice the bananas in half, lengthwise.
  • Add the banana halves to your bowls as shown.
  • Add oatmeal in the middle followed by a dollop of yogurt.
  • Sprinkle with strawberries and fresh berries.
  • Drizzle with melted chocolate and sprinkle with chopped walnuts.
  • Repeat with remaining bowls.
  • Enjoy!
