Berries & Pineapple Yogurt Parfait

Ingredients 

  • Makes 2-3 servings
  • 1 cup Greek yogurt
  • 3-4 Tbsps raw honey
  • 1 tsp vanilla extract
  • 1/2 cup fresh pineapple to pulse
  • 1/4 cup fresh pineapple, chopped for garnish
  • 1/2 cup mixed berries
  • Fresh mint to garnish

Instructions 

  • Place 1/2 cup pineapple, vanilla and honey in a food processor and pulse for about 2 minutes, until you have a smooth puree. Mix the puree with yogurt.
  • Pour the yogurt parfait in wine or dessert glasses, add chopped pineapple, berries and garnish with mint.
