Add your cashews, dates, and dried blueberries to a food processor and process until finely chopped.
Add in the oats, vanilla, honey or maple syrup, lemon zest, lemon juice, and the teeniest pinch of sea salt if using.
Process until well combined into a thick sticky paste. If it's too dry add a teaspoon or two of warm water then process again.
Take equal spoonfuls and form small balls into your palms. A cookie scoop works really well for this step.
These will likely be sticky and the texture will improve after refrigerating for a few hours.
Refrigerate in a sealed container for up to 1 week or freeze for a month.
