Blueberry Lemon Power Bites

Ingredients

  • 1 cup raw cashews
  • ½ cup pitted dates
  • ¼ cup dried blueberries
  • ¾ cup old-fashioned rolled oats
  • 2 tsps vanilla or almond extract
  • 2 Tbsps raw honey or pure maple syrup
  • 1 Tbsp fresh lemon zest
  • 1 Tbsp fresh lemon juice

optional:

  • a very tiny pinch of sea salt

Instructions

  • Add your cashews, dates, and dried blueberries to a food processor and process until finely chopped.
  • Add in the oats, vanilla, honey or maple syrup, lemon zest, lemon juice, and the teeniest pinch of sea salt if using.
  • Process until well combined into a thick sticky paste. If it's too dry add a teaspoon or two of warm water then process again.
  • Take equal spoonfuls and form small balls into your palms. A cookie scoop works really well for this step.
  • These will likely be sticky and the texture will improve after refrigerating for a few hours.
  • Refrigerate in a sealed container for up to 1 week or freeze for a month.
