Breakfast Berry Quinoa Bowls

This breakfast quinoa berry bowl is a sweet twist on a typically savory dish. It's made by infusing the quinoa with honey and vanilla, then adding sweet berries, nut butter, and Greek yogurt.

Ingredients 

  • 1 cup uncooked quinoa, rinsed and drained
  • 1 2/3 cups milk of choice, I use coconut milk
  • 2 Tbsps raw honey or pure maple syrup
  • 1 Tbsp fresh lemon zest
  • 1 tsp vanilla extract

Toppings for the bowls:

  • plain Greek yogurt or coconut yogurt
  • fresh berries of choice
  • nut butter or seed butter of choice

Instructions 

  • Place your rinsed quinoa in a small saucepan then add the milk, honey, lemon zest, and vanilla.
  • Bring to a boil while stirring to combine ingredients, then reduce the heat to a simmer and cover the pan. Cook for 12-15 minutes.
  • Once the cooking time is up, remove from heat and allow your quinoa to absorb all the liquid, for about 5 minutes covered in the pan.
  • Divide your cooked quinoa equally among your serving bowls and top as desired with yogurt, strawberries, and a drizzle of nut butter.
