Buffalo Chicken Cold Lunchbox

Ingredients

  • 2 large cooked chicken breasts
  • 2 cups homemade hummus
  • 1/2 cup Buffalo sauce or more to taste
  • 4 oz crumbled blue cheese
  • 4 celery ribs trimmed and cut into sticks
  • 4 medium carrots peeled and cut into sticks

Instructions

  • Chop your cooked chicken and divide equally among your glass containers.
  • Slice the celery and carrots into sticks and add them to your containers next to the chicken.
  • In a medium bowl, whisk your hummus and buffalo sauce together.
  • Taste test and adjust as desired.
  • Transfer the buffalo hummus to your glass containers. Sprinkle it with crumbled blue cheese.
  • Keep refrigerated until ready to eat.
  • Cooked chicken stays good in the fridge for 3-4 days max.
