Buffalo Chicken Salad

Ingredients 

  • 1 lb. boneless skinless chicken breasts or tenders, cut into 1-inch cubes
  • 1/2 tsp sea salt, or to taste
  • 1/4 tsp freshly ground black pepper, or to taste
  • 2 Tbsps ghee or clarified butter
  • 4 Tbsps buffalo sauce
  • 8 cups salad greens of choice
  • 4 celery ribs
  • 2 medium carrots, peeled
  • 1/2 cup crumbled blue cheese, or feta cheese
  • 1/2 cup all natural ranch dressing, or blue cheese dressing

Instructions 

  • Cut your chicken into cubes and season with salt and pepper.
  • Melt your butter in a large skillet over medium-high heat.
  • Add in chicken and cook stirring frequently, until nicely golden brown.
  • Stir in the hot sauce and continue to cook for a couple of minutes more, until cooked through.
  • While your chicken is cooking, chop your lettuce, celery ribs and shred the carrots.
  • Once the chicken is done, remove from heat and set aside allowing it to cool a bit.
  • Place the lettuce, celery and carrots into a serving bowl.
  • Add chicken and crumbled cheese, then drizzle your salad dressing of choice on top.
  • Toss well and serve immediately.
