Cut your chicken into cubes and season with salt and pepper.
Melt your butter in a large skillet over medium-high heat.
Add in chicken and cook stirring frequently, until nicely golden brown.
Stir in the hot sauce and continue to cook for a couple of minutes more, until cooked through.
While your chicken is cooking, chop your lettuce, celery ribs and shred the carrots.
Once the chicken is done, remove from heat and set aside allowing it to cool a bit.
Place the lettuce, celery and carrots into a serving bowl.
Add chicken and crumbled cheese, then drizzle your salad dressing of choice on top.
Toss well and serve immediately.
