Butter-Herb Corn-on-the-Cob

Ingredients 

  • 2 Tbsps clarified butter or ghee, at room temperature
  • 2 Tbsps minced fresh parsley
  • 2 Tbsps minced fresh chives
  • 1 tsp sea salt, or to taste
  • 1/2 tsp crushed chili flakes, or to taste
  • 8 ears sweet corn, husked and cut into 2.5-inch pieces

Instructions 

  • Fill a very large pot with water and bring it to a boil over medium-high heat. Add your corn and boil for just about 5 minutes.
  • Meanwhile, add the rest of your ingredients to a very large bowl. Whisk the clarified butter or ghee with herbs and seasonings.
  • Once your corn is done to your liking, carefully drain completely and while still hot transfer cobs to the bowl with the butter-herb mixture. Toss well to coat your corn.
  • Serve immediately and enjoy!
