Rinse your Romaine lettuce leaves thoroughly and pat the excess moisture with a paper towel, then set aside.
In a large bowl, combine shredded chicken with tomato sauce, hot sauce, and chopped celery; season to taste and stir until well combined.
To assemble, lay lettuce leaves flat onto a large platter.
Add spoonfuls of chicken mixture into the center of each leaf.
Top with cherry tomatoes, onions and blue cheese.
