Cheesy Jalapeno Avocado Toast

Ingredients 

  • 4 slices of Ezekiel, or Rye bread
  • 1 small ripe avocado
  • 1 Tbsp lemon juice
  • 1-2 small jalapenos, thinly sliced
  • 10 cherry tomatoes, quartered
  • 3 Tbsps shredded Mexican cheese blend

Instructions 

  • Toast your bread until nice and golden, just to your liking.
  • Meanwhile, in a small bowl place the avocado together with a squeeze of fresh lemon juice, and mash it with a fork.
  • Season with sea salt and pepper to your taste.
  • Top toasted bread with mashed avocado mixture, then top it with cherry tomatoes, shredded cheese and jalapeño slices.
  • Broil for 3-4 minutes, or until cheese is melted. Watch it closely! Goes from almost there to burnt...fast!
