Preheat your oven to 350 degrees f.
In a large bowl, add all of your meatloaf ingredients. Stir very thoroughly to combine everything well.
Spray or rub a standard 12-cup muffin tin with avocado oil.
Divide your meatloaf mixture evenly between the 12 muffin cups. Bake for 12 minutes.
Meanwhile, in a small bowl whisk together your sauce ingredients.
Once the time is up, carefully remove from the oven then top each mini meatloaf evenly with the sauce. Then back into the oven.
Continue to bake for an additional 10-15 minutes or until just cooked through.
Allow to cool for a few minutes, then carefully remove from the tin and garnish with additional chopped parsley if desired.
Serve your meatloaf on top of mashed potatoes with a side of green beans.
