Chicken Caesar Salad Wraps

Ingredients 

  • 1 Tbsp olive oil or avocado oil
  • 1 lb chicken breast
  • sea salt and ground pepper, to taste
  • 4 sprouted wheat tortillas
  • lettuce leaves of choice
  • 1 cucumber, very thinly sliced
  • 1/2 cup pitted kalamata olives, sliced

For the Caesar dressing:

  • Juice from 1 large fresh lemon
  • 2 Tbsps raw honey
  • 1 Tbsp coconut aminos, tamari, Braggs liquid aminos, or low sodium soy sauce
  • 1 Tbsp dijon mustard
  • 1/2 cup plain Greek yogurt
  • 2 anchovies in olive oil, drained and finely minced

Instructions 

  • Heat the oil in a large skillet over medium heat.
  • Season your chicken breast with sea salt and pepper on both sides. Cook the chicken until golden brown and no longer pink in the center.
  • Alternatively, you can grill the chicken.
  • Once the chicken is done cooking, allow it to cool, then chop it up.
  • Meanwhile, in a small bowl, whisk all of your Caesar dressing ingredients together really well.
  • Place the chicken pieces into a bowl and stir in the Caesar dressing using a spatula to get all of it.
  • Heat your tortillas lightly in the skillet so that they are more pliable.
  • To assemble your wraps, lay one tortilla on a clean surface.
  • Top with lettuce, chicken, cucumber, and olives as desired.
  • Roll up tortillas, slice in half, and serve.
