Heat the oil in a large skillet over medium heat.
Season your chicken breast with sea salt and pepper on both sides. Cook the chicken until golden brown and no longer pink in the center.

Once the chicken is done cooking, allow it to cool, then chop it up.
Meanwhile, in a small bowl, whisk all of your Caesar dressing ingredients together really well.
Place the chicken pieces into a bowl and stir in the Caesar dressing using a spatula to get all of it.
Heat your tortillas lightly in the skillet so that they are more pliable.
To assemble your wraps, lay one tortilla on a clean surface.
Top with lettuce, chicken, cucumber, and olives as desired.
Roll up tortillas, slice in half, and serve.
