Poach your chicken according to our recipe above, then allow it to cool completely.
Chop your cooled chicken and your cheese into equal size cubes. Mine are just under 1- inch in diameter. Depending on who you're making the lunchbox for, you may want smaller cubes for young children or slightly larger for older children and adults. Have some fun with this part.
Carefully thread 1 chicken cube onto each skewer, followed by a piece of folded thin-sliced deli meat, then your cheese cube.
Add skewers to your lunchbox along with your tomatoes and olives (or any sides of your choice).
These stay good in the fridge for up to 3 days.
It's recommended to place your lunchbox on an ice pack when heading out for the day.
