Chicken Club Lettuce Wrap

Ingredients 

  • 1 grilled or roasted chicken breast, sliced
  • 1 large vine-ripened tomato, thinly sliced
  • 4 Iceberg or Romaine lettuce leaves
  • 1 ounce grated or sliced sharp cheddar cheese
  • 2 thin slices of cooked nitrate-free bacon
  • 2 tsps homemade mayonnaise

Instructions 

  • Thinly slice your chicken and the tomato.
  • Lay a 12-inch square of parchment paper on your clean working surface.
  • Place the lettuce leaves on top of each other, doubled up to create a strong lettuce wrap.
  • Top with cheddar, chicken, tomato, bacon, and mayonnaise.
  • Sea salt and pepper if desired.
  • Tightly wrap your stuffed lettuce like a burrito, using the parchment paper as support as shown in the video.
  • Slice your wrap in half and serve immediately or pack it in a cooler for lunch. Best enjoyed within a few hours.
