In your food processor, place all of your ingredients and process until well combined.
Scrape down the sides and process again just until it starts to resembles crumbled cookie dough.
Line a sheet pan with parchment paper.
Take a spoonful of mixture and roll it between your palms to create a ball, as shown.
Repeat with remaining mixture.
Place the balls into the prepared sheet pan and refrigerate for up to 1 hour.
Transfer to an air-tight container and keep refrigerated until ready to serve.
