Chocolate Date Quinoa Bites (Easy No-Bake Treat)

These chocolate date quinoa bites are a fun combination of two recipes; chocolate date bites, and chocolate quinoa crisps.  What you get is a healthy chewy chocolate covered bite made from dates with the added crunch from the puffed quinoa on top.

Ingredients 

Instructions 

  • Place each date into one of the cups of a 12 muffin tray. Press with the bottom of a cup to create the base as shown in the video.
  • Melt your chocolate together with the coconut oil in the microwave on High, in 30 seconds increments, stirring after each increment. Alternatively, you can use a double boiler over the stove.
  • In a medium bowl, add your puffed quinoa with melted chocolate. Stir well to combine and coat all the little puffs.
  • Add a spoonful of your chocolate-covered quinoa puffs over the smashed dates until it’s all distributed equally between all, then pat them down nice and level.
  • Freeze for 30 minutes.
  • Remove from the muffin tray and enjoy!
  • Refrigerate or freeze in an airtight container for up to 2 weeks.

Notes

  • Look for a higher percentage of cacao (70% or higher) for the chocolate, and always read the ingredients.
  • Buy your chocolate when it’s on sale!
  • Use a small glass or spoon to press the medjool dates into the bottom of the muffin tin (see video) when making these chocolate quinoa bites.
  • Be sure to use the freezer and not the refrigerator to set these treats so they don’t get soggy!
  • Make sure you get puffed quinoa that is crispy and crunchy, not soft!
