Cilantro Garlic Lime Shrimp Salad with Roasted Corn & Jalapeños {with Clean Homemade Salad dressing!}
Ingredients

lb
large raw shrimp peeled & deveined
tails on (rinsed & pat dry)

Tbs
olive or melted coconut oil
1
bunch coarse chopped cilantro
juice of 2 limes
4
cloves
minced garlic
1
tsp
sea salt
4
ears of fresh corn
corn removed from the cob
4
medium jalapeños
seeded & sliced into rings
2
Tbs
extra virgin olive oil
sea salt to taste
Simple Cilantro Lime Dressing:
1/4
cup
extra virgin olive oil
1/4
cup
apple cider vinegar
2
Tbsp
water
Juice of 2 fresh squeezed limes
2
cloves
garlic minced
1-2
Tbs
chopped cilantro
depending on preference
1
tsp
sea salt
Instructions
Preheat oven to 375 degrees
In a large bowl combine:
1 lb large raw shrimp peeled & deveined, tails on (rinsed & pat dry)
2 Tbs olive or melted coconut oil
1 bunch coarse chopped cilantro
juice of 2 limes
4 cloves minced garlic
1 tsp sea salt
Combine all ingredients, lay on flat sheet pan.
Bake 10-11 minutes in your preheated 375 degree oven until shrimp are fully cooked ♥
