Cilantro Garlic Lime Shrimp Salad with Roasted Corn & Jalapeños {with Clean Homemade Salad dressing!}

Ingredients

  • 1 lb large raw shrimp peeled & deveined tails on (rinsed & pat dry)
  • 2 Tbs olive or melted coconut oil
  • 1 bunch coarse chopped cilantro
  • juice of 2 limes
  • 4 cloves minced garlic
  • 1 tsp sea salt
  • 4 ears of fresh corn corn removed from the cob
  • 4 medium jalapeños seeded & sliced into rings
  • 2 Tbs extra virgin olive oil
  • sea salt to taste

Simple Cilantro Lime Dressing:

  • 1/4 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 2 Tbsp water
  • Juice of 2 fresh squeezed limes
  • 2 cloves garlic minced
  • 1-2 Tbs chopped cilantro depending on preference
  • 1 tsp sea salt

Instructions

  • Preheat oven to 375 degrees
  • In a large bowl combine:

1 lb large raw shrimp peeled & deveined, tails on (rinsed & pat dry)

    2 Tbs olive or melted coconut oil

      1 bunch coarse chopped cilantro

        juice of 2 limes

          4 cloves minced garlic

            1 tsp sea salt

            • Combine all ingredients, lay on flat sheet pan.
            • Bake 10-11 minutes in your preheated 375 degree oven until shrimp are fully cooked ♥
