Cilantro Lime Coleslaw

Ingredients 

  • 6 cups freshly shredded green cabbage
  • 2 large carrots, shredded
  • 4 celery ribs, thinly sliced
  • 1 bunch fresh cilantro, chopped
  • 4 green onions, sliced
  • 2 cups fresh or frozen organic corn kernels
  • 1/4 cup crumbled cotija cheese

Dressing:

  • 1/4 cup plain Greek yogurt
  • 1/4 cup homemade mayonnaise
  • 1 Tbsp homemade taco seasoning
  • 1 fresh lime, juiced
  • sea salt and black pepper, to taste

Instructions 

  • Shred your cabbage and carrots into a large salad bowl.
  • Add the celery, cilantro, green onions, and corn.
  • In a small bowl, whisk together all of the ingredients for your dressing.
  • Pour dressing over the cabbage and toss very well to coat.
  • Sprinkle with cotija cheese and enjoy!
  • Stays good in the fridge for up to 2 days.
  • Enjoy!
