Citrus Avocado Salad

Ingredients

  • 2 large ripe avocados peeled and sliced
  • 1 large red grapefruit sectioned
  • 4 medium oranges peeled and sliced
  • 1/2 small red onion finely chopped
  • 1/2 cup pomegranate perils from 1 pomegranate
  • 1 jalapeno seeded, and finely chopped
  • a handful of fresh cilantro leaves chopped
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp sea salt or to taste
  • 1/4 tsp coarsely ground pepper or to taste
  • 1/4 cup crumbled feta cheese or goat cheese

Instructions

  • Slice your avocados in half lengthwise.
  • Open up the halves and remove the pit. Scoop out the flesh and cut into slices.
  • Peel and segment your grapefruit and oranges.
  • In a large serving bowl, add avocados, grapefruit, oranges, onion, pomegranate seeds, jalapeño and cilantro as shown.
  • Drizzle with olive oil, and sprinkle with sea salt and pepper and gently toss to combine.
  • Top with crumbled feta cheese, then cover.
  • Refrigerate for an hour before serving to allow the flavors to blend.
  • Serve cold, and enjoy!
