Clean & Fresh Christmas Salad with Homemade Orange Honey Dressing

Ingredients

makes about 4 servings

  • 6 cups baby spinach
  • 1 cup pomegranate seeds from 1 large, fresh pomegranate
  • 1 large orange peeled and sliced
  • 4 celery stalks thinly sliced
  • 1/4 cup sliced almonds

For the orange dressing:

  • Juice from one fresh orange
  • 2 Tbsps apple cider vinegar
  • 2 Tbsps olive oil
  • 1 Tbsp raw honey
  • 1 small shallot minced
  • sea salt and fresh ground black pepper to taste (about 1/4 teaspoon each)

Instructions

  • Combine all dressing ingredients into a small mason jar, place the lid on and shake well to emulsify. (Alternately you may whisk dressing ingredients in a small bowl)
  • Add all the salad ingredients nicely to a large bowl or platter, starting with spinach on the bottom and building up.
  • Drizzle dressing over just before serving and toss gently to combine.
