Clean Peppermint Patty – York Peppermint Patties Recipe Improved

Ingredients 

  • 1 ½ cup shredded unsweetened coconut, Let’s do Organic brand tastes best for these
  • 2 Tbsps coconut milk
  • 2 Tbsps coconut oil
  • ¼ cup raw honey, buy local!
  • ½ tsp peppermint extract
  • 1 cup of dark chocolate, melted I really like Lily's brand dark chocolate sweetened with stevia because of it's lower sugar content.

Instructions 

  • In a blender pulse the shredded coconut, coconut milk, coconut oil, honey, and peppermint extract.
  • Process until a smooth paste has formed.
  • Shape the paste into round discs and coat/drizzle with a light coat of melted chocolate.
  • Place the patties on wax paper, then set in the freezer for about 20 minutes.
  • Enjoy! Store leftovers (tightly wrapped) in the fridge or freezer! ♡
  • P.S. I sprinkled mine with a tiny dusting of organic candy cane (CORN SYRUP FREE)
