Coconut Mango Chia Pudding

Ingredients

  • 1 large ripe mango diced
  • 1 x 15oz can of unsweetened coconut milk
  • 1/3 cup coconut water
  • 1 tsp vanilla extract
  • 1/2 cup chia seeds
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup raw honey or pure maple syrup

Optional:

  • another ripe mango chopped for serving

Instructions

  • Shake your can of coconut milk really well before opening it to incorporate the creaminess throughout.
  • Peel and slice your ripe mango into bite-sized cubes and place in a large bowl.
  • Add in all of the remaining ingredients.
  • Thoroughly stir to combine, then stir again. Chia seeds need to be combined very well with the other ingredients. Stir this mixture for several minutes to activate the chia seeds so that they gel up really well.
  • Transfer your mixture equally to 4 smaller glass jars. Seal with a lid.
  • Refrigerate overnight.
  • If desired, top your pudding with additional chopped fresh mango immediately before serving.
