Cottage Cheese Meatballs with Burst Cherry Tomatoes

2Tbspsavocado oil, tallow, ghee, or olive oil, for cooking the meatballs
Sauce:
2Tbspsghee or grass-fed butter
4fresh garlic cloves, sliced
2cupsripe cherry tomatoes
1/3cupof your favorite wine or chicken broth
1tspdried chili flakes
sea salt and ground pepper, to taste
freshly chopped parmesan to garnish
optional: fresh herbs to garnish

Instructions
In a large bowl, add all the ingredients for the meatballs, except the oil, and stir well to combine.
Form into 1 tablespoon-sized meatballs. A cookie scoop works great for this.
Heat your oil of choice over medium-high in a large heavy bottomed skillet and cook the meatballs until nicely golden brown on all sides. Set aside and cover to keep warm.
In the same preheated skillet over medium heat add the ghee and garlic, then sauté for 1 minute.
Add in the cherry tomatoes and wine; cook while stirring until tomatoes begin to split and burst. Sprinkle with chili flakes, sea salt, and pepper to taste.
With the back of your wooden spoon, carefully smash some of the tomatoes to form a delicious sauce.
Nestle your cooked meatballs into the sauce and simmer for a couple of minutes to heat up.
