Cranberry Apple Crisp

Servings: 8

Ingredients

  • 2 cups gluten-free rolled oats
  • 1/2 cup coarsely chopped walnuts
  • 1/2 cup coarsely chopped blanched almonds
  • 2 tsps flaky sea salt
  • 2/3 cups raw honey or maple syrup
  • 1/3 cup ghee or unrefined coconut oil melted

For The Filling:

  • juice and zest of 1 large fresh orange
  • 8 large apples of choice peeled, cored, and chopped into 1/2-inch cubes
  • 1-1/2 cups fresh cranberries
  • 1/3 cup honey or maple syrup
  • 2 Tbsps gluten-free flour or Arrowroot powder
  • 2 tsps ground cinnamon

Instructions

  • Preheat your oven to 350 degrees f. and lightly grease a 9 x 13-inch baking dish with ghee or coconut oil.
  • First, let's make the fruit filling:
  • Place your freshly squeezed orange juice into a large bowl.
  • Slice 2-3 apples and quickly toss them in your orange juice. Repeat with remaining apples, slicing them in small batches to prevent them from browning.
  • Once all the apples are prepared, add the remaining filling ingredients to your bowl. Stir everything really well to combine.
  • Transfer the apple-cranberry mixture into your prepared baking dish using a spatula to get all the goodness into the dish. Level it all out into an even layer and cover with parchment or aluminum foil. Bake for 20-25 minutes, stirring halfway.
  • Meanwhile, in a medium bowl, stir the oats, walnuts, almonds, salt, honey/maple syrup, and ghee/coconut oil. Stir very well until every piece is lightly coated.
  • Once the baking time for your filling is up, carefully remove the dish from the oven.
  • Give the filling a good stir, then evenly sprinkle it with your oat topping.
  • Return to the oven and bake for about 20-25 minutes uncovered, or until the crumble is lightly golden and bubbly on the sides. Keep an eye on it so that it doesn't burn.
  • Enjoy!
