Creamy Braised Green Beans

Ingredients 

  • 2 lbs fresh or frozen green beans
  • 1 cup unsweetened canned coconut milk
  • 1 Tbsp gluten free flour, or Arrowroot powder
  • 4 fresh garlic cloves, minced
  • 2 Tbsps fresh squeezed lime juice
  • 1 tsp cayenne pepper
  • 2 Tbsps unrefined coconut oil, ghee, or avocado oil
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp sea salt

Instructions 

  • If using fresh beans, rinse them thoroughly and pat dry excess moisture.
  • Trim off the knobby ends of the beans and cut in half if desired.
  • Heat a large frying pan over medium-high heat and add in your oil.
  • Carefully place the green beans into the oil and cook, tossing with tongs, for 2 minutes.
  • Season the beans with sea salt and pepper to your taste.
  • In a small bowl, whisk coconut milk, flour, garlic, lime juice and cayenne pepper.
  • Pour your coconut milk mixture over the beans, cover and reduce the heat. Simmer on low for about 10-12 minutes, stirring occasionally, until beans are tender crisp and sauce thickens a bit.
  • Taste test, and adjust seasonings to your liking.
  • Serve hot and enjoy.
