Creamy Cilantro Lime Dressing for Clean Eating!

Ingredients

  • 3 cups cilantro leaves stems removed and chopped
  • 1 cup plain Greek yogurt
  • 3-4 fresh garlic cloves minced
  • 2 tsps raw honey
  • 1/3 cup lime juice from 3-4 juicy limes
  • 1/3 cup olive oil
  • sea salt and pepper to taste

Instructions

  • In a food processor or blender combine cilantro leaves, yogurt, garlic, honey, and lime juice. Pulse just until smooth, do not over blend.
  • With the motor running, slowly add olive oil through the feed tube.
  • Season to taste with sea salt and pepper (I like 1/2 teaspoon sea salt and a pinch of pepper). Pulse until just combined, do not overblend.
  • Chill at least 20 minutes to allow flavors to develop.
  • Stays good refrigerated for up to one weeks.
  • Give it a good stir before using.
