Creamy Ranch Chicken and Broccoli

Ingredients 

  • 1 medium head of broccoli, broken into bite-sized florets and lightly steamed
  • 1 lb boneless, skinless chicken thighs, cut into bite-size pieces
  • sea salt and ground pepper, to taste
  • 1 Tbsp avocado oil or olive oil, divided
  • 4 fresh garlic cloves, pressed
  • 1/3 cup chicken bone broth
  • 1 Tbsp apple cider vinegar
  • 1/2 cup plain Greek yogurt
  • 1/4 cup homemade mayonnaise
  • 2 Tbsps fresh parsley, chopped
  • 2 Tbsps fresh chives, chopped
  • 2 Tbsps fresh dill, chopped

Instructions 

  • Season your chicken with sea salt and pepper.
  • Heat the oil in a large skillet over medium heat.
  • Add the chicken and sauté for 8-10 minutes or until golden brown and cooked through. Stir in the garlic and continue to cook for 30 seconds.
  • Add in your chicken broth, and vinegar to deglaze the pan, allowing the liquid to mostly reduce.
  • Add in the yogurt, mayonnaise, and chopped fresh herbs then stir to create a creamy sauce.
  • Add the steamed broccoli and stir to combine.
  • Sprinkle with any additional herbs if desired and serve.
