Crispy Potato Skin Chips

The next time you have to peel potatoes, create less waste and a tasty snack by saving the peels to make these Potato Skin Chips! They are a crunch, salty, and perfectly healthy alternative to regular potato chips.

Ingredients 

  • 1.2 oz Russet Potato Peels, (about 1/2 pounds of potatoes peeled)
  • 2 Tbsps olive oil, or avocado oil
  • garlic salt, to taste
  • freshly ground black pepper, to taste

Instructions 

  • Preheat your oven to 400 degrees f. and line a large baking sheet with parchment paper or lay on a silpat.
  • To prepare the potato peels, scrub the potato skins very well, then pat dry, or allow to air dry, and then peel.
  • Place just the peels onto your prepared baking sheet and toss the peels with oil and seasonings until thoroughly coated.
  • (Use your leftover potato for another use of course.) Roast peels for 15-20 minutes, stirring halfway in between roasting time.
  • Keep and eye on them and remove from the oven once they're crisp and golden or done to your liking.
  • Allow them to cool a bit, then enjoy!
  • You can place them in a clean jar and save them for later.
  • You can eat your chips right off the baking sheet, or save them in a jar for later.
  • Enjoy!
