Crowd Pleasing Chocolate Chip Yogurt Muffins (Clean Eating Approved!)

Ingredients 

  • 2.5 cups plain Greek yogurt, full fat
  • 10 large eggs
  • 6 tbsp melted coconut oil
  • 2 tsp vanilla extract
  • 3 tsp baking powder
  • 2 cups almond flour
  • 1 cup coconut flour
  • 6-8 packets of stevia or sweetener of choice
  • 1/2 cup dark chocolate chips

Instructions 

  • Preheat the oven to 350F.
  • Line a muffin tin with papers, or spray the tin.
  • In a bowl, mix yogurt, eggs, vanilla and coconut oil until well combined.
  • Add all dry ingredients to a separate bowl, and whisk together until combined well.
  • Then gently stir dry ingredients into the wet ingredients. Mix until well combined.
  • Lastly, fold in the chocolate chips, reserving some to place on top.
  • Bake for about 20 minutes or until the tops are browned and a toothpick inserted in the center comes out clean.
