Dark Chocolate Covered Fruits Recipe

Ingredients

  • 1 cup high quality dark chocolate chopped
  • 1 Tbsp coconut oil

Options for dipping:

  • 8 large strawberries
  • 1 crisp apple cut into 6 slices
  • 2 fresh apricots or nectarines cut into 8 segments
  • 1 banana sliced into 1/2 inch thick slices +
  • 2 Tbsp almond butter
  • 2 Tbsp chopped almond pieces
  • 2 Tbsp unsweetened dried coconut

Instructions

  • Instructions:
  • Line a large baking sheet with parchment paper.
  • Melt chocolate with the coconut oil in a double broiler on the stove top, or microwave for 30 seconds. Stir, and add 15 seconds if needed.
  • Dip strawberries halfway into melted chocolate, then sprinkle with nuts.
  • Place it on the lined baking tray.
  • Dip apples 1/3 of the way into melted chocolate.
  • Sprinkle dried coconut on top.
  • Place on the lined baking tray.
  • Dip apricot segments half way into melted chocolate then sprinkle with nuts.

To make the frozen banana bites:

  • Slice bananas 1/2 inch thick. Add 1 teaspoon almond butter on half of the banana slices and place the other banana slice on top.
  • Add a toothpick in the middle to hold it together.
  • Dip banana bite halfway into melted chocolate.
  • Sprinkle with chopped nuts.
  • Place the baking tray with all the fruit in the freezer for about 15 min.
  • When the chocolate is solid you can remove from the freezer and serve, or keep it in the fridge/freezer in an airtight container for up to 3 days.
