Easiest Soft Pumpkin & Peanut Butter Cookies! – No flour! No grain!

Servings: 8 -10 cookies

Ingredients

  • 4 Tbsp Peanut Butter Don’t use the oily part. Use solid nut butter for these, so they do not become too moist
  • 1 small mashed banana do NOT use an overly ripe banana, a new/firm banana works best
  • 2 Tbsp pumpkin puree
  • 1/4 cup dark cacao chunks or use Lily’s brand sweetened with stevia
  • 1 tsp granulated stevia or 1 Tbsp. raw honey
  • Pinch of cinnamon optional

Instructions

  • Preheat oven to 350 degrees f
  • Combine all the ingredients
  • Scoop by rounded Tbsp onto coconut oil greased cookie sheet.
  • Press down gently with fork.
  • Bake in preheated 350 degree oven for 12-14 minutes.
  • Cookies are very soft. {and soo good!!}
