Instructions
Place walnuts in your food processor. Process by pulsing, scraping sides until the walnut butter is the consistency of natural peanut butter. You will
get about a half cup of walnut butter.
Transfer the walnut butter using a rubber spatula to a medium-sized bowl and add in the oats, flaxseed meal, cranberries, shredded coconut, maple syrup, and pistachios.
Stir to combine all ingredients really well. Using your hands, press firmly to form into balls.
Place in an air-tight container and refrigerate until serving. You
can also freeze the energy balls. It will only take them 10-20 minutes to defrost.
Serve and enjoy.
