Family Sized Burrito Bowls w/ Avocado Cilantro Dressing

Ingredients 

  • 1 ripe Haas avocado
  • 3 Tbsp nonfat plain Greek yogurt
  • 4 Tbsp fresh cilantro leaves
  • 4 tsp fresh lime juice
  • 1 tsp raw honey
  • 4-6 Tbsp cold water, to desired consistency
  • 1/4 tsp sea salt

I made these Family Sized Burrito Bowls to celebrate National Guacamole Day

  • Chopped crisp red leaf lettuce
  • Brown rice
  • Local corn, grilled
  • Organic grape tomatoes, chopped
  • Avocado, diced
  • Grilled lime
  • Cumin Grilled Chicken
  • Cilantro

Instructions 

  • Puree all of the ingredients in a mini food processor or blender.
  • Adjust seasoning to taste.
  • Drizzle & enjoy!
