Flavorful Marinated Mushroom Kabobs

Ingredients 

  • ¼ cup high-quality balsamic vinegar
  • 2 Tbsps avocado oil or olive oil
  • 4 cloves fresh garlic, pressed
  • sea salt and freshly ground black pepper, to taste
  • 2 lbs cremini and button mushrooms
  • handful of fresh parsley, minced
  • bamboo skewers or metal skewers

Instructions 

  • Soak your wooden skewers in water for at least 30 minutes, so they don't burn on the grill.
  • Preheat an outdoor grill or an indoor grill pan over medium heat.
  • In a large bowl, combine all of the ingredients (except for the parsley) then gently stir to coat your mushrooms with everything really well.
  • Set aside for about 5 minutes to allow the flavors to marinate.
  • Thread your marinated mushrooms onto bamboo skewers as shown.
  • Grill for about 2 minutes per side, or until grill marks appear and mushrooms begin to shrink in size.
  • Garnish with fresh parsley and enjoy while hot.
