Soak your wooden skewers in water for at least 30 minutes, so they don't burn on the grill.
Preheat an outdoor grill or an indoor grill pan over medium heat.
In a large bowl, combine all of the ingredients (except for the parsley) then gently stir to coat your mushrooms with everything really well.
Set aside for about 5 minutes to allow the flavors to marinate.
Thread your marinated mushrooms onto bamboo skewers as shown.
Grill for about 2 minutes per side, or until grill marks appear and mushrooms begin to shrink in size.
Garnish with fresh parsley and enjoy while hot.
