To make the hummus, place the chickpeas in a blender or food processor.
Add the tahini, garlic, olive oil, lemon juice, water, salt and pepper. Blend until smooth.
In a large glass bowl add all salad ingredients.
Add 1Tbsp of extra virgin olive oil, fresh lemon juice and season with salt and pepper to taste. Toss gently to combine.
To serve, spread the hummus with the back of a spoon onto a large plate.
Top with the salad and enjoy with friends!
