Fresh Hummus Salad Recipe

Ingredients

Homemade Hummus ingredients:

  • 1 15- ounces of chickpeas rinsed and drained
  • 1/2 cup of tahini
  • 1/4 cup of fresh lemon juice
  • 3 fresh cloves of garlic
  • 2 Tbsp extra virgin olive oil
  • 2-3 Tbsp water
  • sea salt and freshly ground black pepper

Salad ingredients:

  • large handful of mixed greens
  • 1 1/2 cup ripe cherry tomatoes cut into halves
  • 1 small red onion thinly sliced
  • 1/2 cup fresh sliced radishes
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp raw honey
  • juice of one lemon
  • sea salt and pepper to your taste

Instructions

  • To make the hummus, place the chickpeas in a blender or food processor.
  • Add the tahini, garlic, olive oil, lemon juice, water, salt and pepper. Blend until smooth.
  • In a large glass bowl add all salad ingredients.
  • Add 1Tbsp of extra virgin olive oil, fresh lemon juice and season with salt and pepper to taste. Toss gently to combine.
  • To serve, spread the hummus with the back of a spoon onto a large plate.
  • Top with the salad and enjoy with friends!
