Fresh Tomato Basil Chicken

Ingredients 

  • 1 Tbsp olive oil or avocado oil
  • 1 Tbsp ghee, or grass-fed butter
  • 1-1/2 lbs boneless, skinless chicken breast or tenders, cut into 1-inch cubes
  • sea salt and ground black pepper, to taste
  • 4 fresh garlic cloves, sliced
  • 4 large vine-ripened tomatoes, diced
  • 1 bunch of fresh basil, leaves picked

Instructions 

  • Preheat a large skillet over medium-high heat. Add in the oil and butter.
  • Stir Fry your chicken pieces for around 6 minutes until cooked through and nicely browned; Season with sea salt and pepper.
  • Add in the garlic and cook for another 30 seconds, stirring constantly.
  • Stir in the fresh diced tomatoes and basil.
  • Saute for a few more minutes, or until bubbly and hot.
  • Garnish with additional fresh basil leaves if desired.
  • Serve immediately.
