Preheat a large skillet over medium-high heat. Add in the oil and butter.
Stir Fry your chicken pieces for around 6 minutes until cooked through and nicely browned; Season with sea salt and pepper.
Add in the garlic and cook for another 30 seconds, stirring constantly.
Stir in the fresh diced tomatoes and basil.
Saute for a few more minutes, or until bubbly and hot.
Garnish with additional fresh basil leaves if desired.
Serve immediately.
