Place your watermelon half cut side down on your clean chopping board. Cut into 1- inch-thick half moon slices as shown in the video.
Take a half moon and cut it into 3-4 triangular wedge shapes. Repeat with the remaining slices of watermelon.
Carefully insert a popsicle stick into the rind of each watermelon wedge.
Spread the pops out on a parchment paper-lined cookie sheet, making sure that they’re not touching.
Gently pat the top of the slices with a paper towel to absorb any excess moisture.
Freeze for 4-6 hours, until frozen through.
Serve immediately after freezing.
Note: they don’t hold well in the freezer for very long as they start to develop freezer burn and become very icy. Make what you'll use that day.
