- 4-5 sweet potatoes, or yams
- 4 cloves fresh garlic, minced or grated
- 1/4 cup freshly chopped herbs of choice, thyme leaves, sage, parsley, rosemary, chives, etc.
- 1 tsp chili powder
- 2 Tbsps avocado oil, or extra virgin olive oil
- sea salt and freshly ground black pepper, to taste
Prevent your screen from going dark
Scrub your potatoes thoroughly and rinse well.
I prefer these with skin on.
Carefully slice your potatoes into sticks or fry shaped pieces about 1/4-inch thick, with a very sharp knife.
Preheat your oven to 425 degrees f and line 2 large baking sheets with parchment paper.
Place your fries in a big bowl. Sprinkle with garlic, herbs, sea salt, pepper and drizzle with oil.
Gently toss the fries to coat well.
Spread them out evenly onto the prepared baking sheets, in an even layer without overlapping.
Potatoes need their space to crisp up.
Roast for 20-25 minutes, flipping once in between.
Serve immediately with our homemade ketchup and enjoy.
