In a medium bowl, combine really well all the ingredients for meatballs. Use your palms or a cookie scoop to form small meatballs, you'll have around 16 meatballs.
Heat the oil in a large skillet over medium heat. Cook the meatballs while slowly turning them until golden brown on all sides.
Meanwhile, in a medium bowl, whisk all of your ingredients for the sauce until very well combined.
Once the meatballs are golden-brown, drizzle over all the sauce the sauce and reduce the heat to LOW.
Simmer your meatballs into the sauce for 4-5 minutes, stirring occasionally, until the sauce thickens, and the meatballs are no longer pink on the inside.
Garnish with chopped green onions and serve over cooked brown rice, quinoa, or cauliflower rice.
