Gingerbread Overnight Oats

Ingredients 

  • 2 cups old-fashioned rolled oats
  • 2 tsps pumpkin spice seasoning
  • 1 tsp vanilla extract
  • 1- inch knob of fresh ginger, grated on the Microplane
  • 1/4 cup maple syrup or raw honey
  • 2 cups unsweetened milk of choice

Optional:

  • vanilla protein powder
  • gingerbread cookies

Instructions 

  • In a large mixing bowl, add all the ingredients and whisk well to combine. Cover and refrigerate overnight.
  • Next day: Give everything a good stir, then transfer your overnight oats equally into jars or bowls and decorate with gingerbread cookies, if desired.
  • Enjoy!
  • Or keep refrigerated for up to 4 days.
