Greek-Style Quinoa Salad Recipe

Ingredients

  • 1.5 cups cooked quinoa
  • 1 bell pepper diced
  • 1.5 cups fresh cherry or grape tomatoes, halved
  • 1 cup sliced cucumber
  • 1/3 cup Kalamata olives sliced
  • 1 small red onion finely sliced
  • a small bunch of fresh herbs like mint, basil, parsley or cilantro, chopped

For the dressing:

  • 2 Tbsps extra virgin olive oil
  • Juice of 2 small lemons
  • 1 Tbsp raw honey
  • 1 small garlic clove minced
  • sea salt and pepper to your taste

Instructions

  • In a large bowl, combine cooked quinoa, bell pepper, baby tomatoes, cucumber, olives, onion, and fresh herbs.
  • In a small bowl, add the olive oil, lemon juice, raw honey, garlic, salt and pepper.
  • Whisk well to combine.
  • Pour the dressing over the salad before serving and toss gently to combine.
  • Taste and adjust the seasoning if needed. Enjoy!
