Green Beans with Bacon and Fresh Mushrooms

Ingredients 

  • 4 slices thick-cut bacon, chopped
  • 16 ounces button mushrooms, sliced
  • 1 ½ lbs fresh green beans, trimmed
  • 4 fresh garlic cloves, minced
  • sea salt and black pepper, to taste

Instructions 

  • Preheat a large skillet over medium heat.
  • Cook your bacon until crispy, then transfer half of it to a paper towel lined plate to absorb the excess grease. We'll use that half to garnish our dish at the end.
  • In the same preheated skillet with the remaining bacon, add your mushrooms and garlic.
  • Cook over medium-high heat for 5 minutes, or until the mushrooms start to release their juices.
  • Stir in the green beans and continue to cook, stirring often, until beans are tender, around 5 more minutes.
  • Season with sea salt and pepper and remove from heat. Sprinkle the remaining chopped bacon and freshly ground black pepper and serve.
