Preheat a grill pan or outdoor grill for high heat, and lightly grease the grate with coconut oil.
Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear.
Place on platter, then top each pineapple slice with 1 Tbsp ricotta cheese.
Add a drizzle of raw honey if desired.
Garnish with fresh mint leaves and enjoy!
