Ham + Chaffle Breakfast Sandwich 🧇

Ingredients

  • avocado oil or coconut oil cooking spray
  • 2 large eggs
  • freshly ground pepper to taste
  • 1 cup mozzarella or cheddar cheese grated
  • 4 slices nitrate-free ham or deli roasted turkey breast

Instructions

  • Heat your waffle iron and spray well with avocado oil.
  • In a medium bowl, beat the eggs with a tiny pinch of sea salt and ground pepper.
  • Fold in your grated cheese.
  • Take a big spoonful of your egg mixture and pour into the iron waffle and fill the slot as you regularly would.
  • Cook for 3-4 minutes, or until the chaffles are golden brown and puffed.
  • Don't overcook or else they will become chewy.
  • Repeat with the remaining mixture.
  • Slice your chaffle in half and stuff with ham or turkey breast. Serve immediately while hot and cheesy. Or let the chaffles cool and add them to your lunch box for later.
