Homemade Buffalo-Style Chicken Meatballs

Ingredients

  • 1 ½ lbs ground chicken
  • 1/2 cup freshly shredded cheddar cheese
  • 3 fresh garlic cloves pressed
  • 1/2 cup almond flour
  • 1/2 cup oat flour
  • sea salt and ground black pepper to taste
  • 1 cup mild medium, or spicy hot sauce, divided
  • 3 Tbsps grass-fed butter or ghee
  • 2 Tbsps apple cider vinegar
  • crisp fresh carrot and celery sticks to serve with
  • homemade ranch dipping sauce to serve (recipe above)

Instructions

  • In a large bowl, combine the ground meat, cheddar cheese, almond flour, oat flour, garlic, half of the hot sauce, sea salt, and pepper.
  • Mix well to combine.
  • Using your wet hands, take even spoonful's and roll between your palms and create the meatballs. I sometimes use a cookie scoop for this step.
  • Heat the ghee in a large skillet over medium heat.
  • Cook your meatballs, while consistently turning and flipping until golden brown on all sides and cooked through, about 6-8 minutes.
  • As soon as your meatballs are finished cooking, stir in the remaining hot sauce and apple cider vinegar.
  • Serve with your homemade ranch dipping sauce, carrot sticks, and celery, then enjoy!
