  • In a small bowl, pour 1/4 cup cold filtered water over the gelatin and whisk to combine well. Let this mixture sit for about 10 minutes.
  • Meanwhile, in a saucepan, whisk together your orange juice, lemon juice, and ginger. Heat just until hot, do not boil.
  • Remove from heat and stir in your honey and gelatin mixture then whisk until everything is combined completely.
  • Transfer the mixture into a loaf pan pan and refrigerate for 4 hours to set. You may also use any silicone molds you like: https://amzn.to/4aA9Yl3
  • If using the loaf pan, once set, slice into 1 inch cubes as shown, then transfer your cubes to a glass container.
  • Refrigerate for up to 1 week.
